As you all probably know, soba is a type of Japanese noodle made from buckwheat flour.
It’s a very healthy dish that you can find absolutely everywhere in Japan.
Usually served in a soup or dipped into a cold soup and wasabi broth, there’s also other delicious variations.

Here is a cold “goma dare soba”, made of cold soba noodles, a plate of vegetables and steamed chicken, and a rich sesame dipping sauce.
There are plenty of greens, like salad, cucumber, green onions and radish sprouts.
Take some soba noodles, dip them in the sesame sauce and slurp them (with noise like Japanese people)
The sesame has a rich flavor which goes very well with the vegetables and steamed chicken also.
There’s also a mill with sesame if you want to put more and enjoy some crunchiness.
It’s a very refreshing meal you can find in some soba shop in summer, until mid-autumn.
Although not as popular, you can find it in several restaurants, like the one I visited, Takada-ya.
