Carefully brewed sake without depending too much on master brewer.
Brewery closest to the station in Fushimi – "Fujioka brewing"
"Fujioka brewing" is also known as "Resurrection of cellar". With sudden death of its predecessor, the brewery was closed temporarily for quite some time. But the passion of fifth generation in Fujioka family for is not completely discarded. For three years, Fujioka-san practice brewing in various regions and revive the brewery. That is why it is called the "Resurrection of cellar"
From the time Fujioka-san himself become a brewer, the brewery did not do any mass production. It only makes pure rice sake. Initially, the brewery can only 2,800 bottles. Now it can produce up to 20,000 bottles.

One of exceptional sake here is called "Blue Sky".
The taste is like cloudless blue sky, full of clarity. It makes the mind of person drinking it radiant. Inside it, soft-taste-water is used, also often called as magic water with secret taste. The sake feels silky in your throat and permeates up to your heart.

"Good sake leads to heaven, and to the people."
Masaaki Fujioka-san said that he wants to create a drink, that make people who drink feel relieved as if looking up to the blue sky. Hence, the name "Blue Sky"

When I opened the door, it almost feels like I were at sea. The dining hall is illuminated in blue lighting. It makes one fall to illusion like being in the sea. After toast in with "Ine full bloom" of Mukai Brewery, number of splendid cuisine is brought to the table. The cuisine is worthy of the calling "Kyoto of the sea". The dishes use have fresh seafood as main ingredient. It looks like beautiful gem in eyes. Its beautiful decoration is indeed regrettable to eat. The dish work is carefully performed on one by one, creating taste that remains in "memory of the tongue".
