First are two sweets from Kyoto’s Japanese restaurant Shibano Wakuden.

Sasa Hotaru features a deep-colored green powdered tea paste made of white adzuki beans dotted with hoji tea kanten (agar) that look like a drifting firefly.

The combination of the light hints of the aroma of hoji tea with the deep taste of green tea is indescribable.

This pleasant sweet is also beautiful to look at.

Kisui is a bite-sized sweet with an elegant taste featuring the flavor of apples that is wrapped with bamboo and plantain leaves.

Next, we would like to introduce the Kokutou Kuzumochi from Kanou Shoujuan, which is a Japanese sweets shop from Shiga Prefecture that pays special attention to the materials used.

Open the leaves, sprinkle some toasted black soybean flour on it, and put it in your mouth!

A generous amount of smooth sweet red-bean paste is contained within Japanese hon-kuzu (ultra-refined pure arrowroot starch) processed with the flavor of black sugar that has a texture that seems to pleasantly melt in your mouth.

It’s really delicious!

This is the summer-only Nagare Ume from the Niigata sweets maker Osakaya that was founded in 1858.

The fresh and rich flavor of the high-quality plum juice used is irresistible.

The jell containing shredded kuzu also has a fresh texture that is perfect for summer!

Toki Suzuyaka from the traditional Japanese sweets shop Morihachi that was established in 1625 and had been specially appointed by the Kaga Clan (then domain lord in Ishikawa) is a sweet featuring kudzu-starch bun with a bean-jam filling using special hotatsu kuzu that was designated by the Kaga Clan contained in Japanese-style jelly. 

There are four types of kudzu-starch bun with a bean-jam filling available: noto dainagon (type of high-quality adzuki beans), matcha, green plum, and apricot.
