Why do not enjoy a bowl of refreshing cold noodles with some fried ayu, Japan’s most famous river fish?

Taishoan is a small traditional noodle shop in Ôme loved by locals and tourists in Tokyo’s countryside.
It was founded in 1912, more than 100 years!!

Ôme is surrounded by clean rivers coming from the Okutama mountains, where you can catch delicious fish such as “Ayu”.
This is the perfect place to enjoy such fish!
Zaru soba, which means “cold soba noodles” are topped with some wakame seaweed, finely chopped cucumber, grated radish, radish sprouts, fried eggplant and a whole ayu fried in tempura.

Pour the “tsuyu”, the cold soba broth and some green onions, wasabi or chili powder on the top then enjoy!


Ayu fish has a sweet and very delicate taste which goes really well with the noodles and its toppings.
Most of the fish bones have been removed beforehand making it quite easy to eat.
When you finish eating, the waitress will bring you some “soba yu” to drink.
This is the water which has been used to cook the noodles.
It’s full of “lutein”, a healthy protein contained in soba.

If you go out in the countryside or mountains near a river, try to eat some ayu!
