Ogura Toast

The Ogura Toast is a unique Nagoya invention. Composed of a piece of thick toast slathered in butter and topped with red beans and occasionally, cream, there is certainly nothing like it in the rest of Japan. This meal is usually served at coffee shops and is fondly remembered by Nagoyans as a special morning meal. Another variation of this toast is the Ogura Sandwich, when you have red beach paste sandwiched between two pieces of toast.

It is a part of the Nayogan tradition called “morning”, which is a huge breakfast that is served alongside a coffee. That might not sound so amusing after all, but what’s very fascinating is that these breakfast plates come automatically if you order coffee at a local cafe. A “morning” usually comes with a slice of toast, salad, egg (boiled or fried), ham or bacon, and of course a cup of coffee.

Chicken Wings

The special aspect of Nagoya’s chicken wings, also called Tebasaki, is that the wings are seasoned beforehand and fried without batter. To allow for the flavor to seep into the meat, they are 80% fried at the relatively low oil temperature of 150°C. Then, the wings are dipped into a batter of potato starch, and refried at 190°C for a crispy skin.
It would be difficult to recreate the recipe but luckily, you can now purchase pre-made tebasaki from most souvenir stores in Nagoya. To prepare the wings, you just have to heat them up in the oven or fry them in a pan.
