How to make Okonomiyaki & Monjayaki

“Okonomiyaki” is a pancake with mixture of flour and water as base, topped with cabbages and tenkasu (tempura scraps), etc. and grilled on a “teppan” (iron plate). There are Kansai style and Kanto style, and both are famous as Japan’s “konamon”, or flour based food. Okonomiyaki is served together with sauce, katsuoboshi (bonito flakes), seaweed flakes and mayonnaise. On the other hand, monjayaki is similar but the batter is waterier and mixed together with sauce; after grilled on iron plate, it is eaten by using a spatula. This time, we are going to share how to make Okonomiyaki and Monjayaki!


How to make Hiroshima style Okonomiyaki

Spread the batter (mixture of flour and bonito stock) on the iron plate, then topped with shredded cabbage, bean sprouts, green onion, tenkasu, etc. Lastly, place the pork belly on top and flip it over when it gets slightly brown. To flip it towards you is the trick here to avoid the shape collapse. Then, add yakisoba noodles and an egg fried thinly, and it is done! Important points are to sift the flour so that it won’t become lumps, and also to not press the batter when grilled so that it is soft.


How to make Kansai style Okonomiyaki

Mix the batter (mixture of flour and bonito stock) with the grated yam (nagaimo), then mix with ingredients like chopped cabbages, green onions, red ginger and shrimp. Spread the batter in a circle on the heated plate, then place the sliced pork belly on top. Grill for about 3~5 minutes and flip it over using spatula when it has hardened. Cover and cook for another 4~5 minutes, and it is ready to be served.


How to make Monjayaki

Mix the flour with water in the ratio of 1:17. Then add in Worcester sauce and mix. Ingredients are cabbages, tenkasu and others. Put the ingredients on the iron plate and create a donut shape. Pour the batter in the middle of the donut shape. When the batter simmers, mix it with the ingredients and then you can eat using the spatula. You can season it according to your preference. It is also recommended to eat with sauce, shichimi (blend of seven spices), soy sauce or pepper.
