Lee’s Foodblog: Cheesy Tsukemen at Mitsuyado sei-men

I consider the Tsukemen as the brother of ramen in Japan. 
This delicious noodle dish is served separate from its soup, and eating by dipping the noodle into thick broth as you go. 
Mitsuyado sei-men (三ツ矢堂製麺) is a chain restaurant in Japan that has taken this dish a step further by creating the cheesy tsukemen – Japan’s answer to the American mac and cheese.

You can fully customize your tsukemen at Mitsuyado sei-men. 
After selecting the flavor, you can adjust your noodle amount as well as temperature at which you would like it served. 
Since I was adding cheese to mine, I ordered the atsumori (あつもり) as I felt that cold noodles with cheese will not go too well together. 
I also asked for extra vegetables, yasai tappuri (野菜たっぷり) as I was feeling extra healthy that day.

The meal comes on a tray with noodles, dipping broth, cheese sauce, and vegetables. 
From then on, all I had to do was assemble it myself. 
I first placed the vegetables on top of my noodles, and generously poured cheese sauce onto my meal. 
Then, I mixed it well. 
Lastly, I dipped the noodles into the broth before eating each mouthful. 
Some people prefer to keep the soup “clean” by ladling it into the spoon and dipping the noodle-cheese mixture there, but I’d say it’s up to personal preference because the mixture is delicious regardless of how you consume it!
